Interview: Francis Carr

August 22nd is a big day for Pesto as it marks the opening of not only our first restaurant north of the border, but also our biggest restaurant yet. 
 
Located on Glasgow’s bohemian St Vincent Street, the restaurant boasts three floors, each with stunning views of the heart of Scotland’s biggest city.

St Vincent Street is also home to one of Scotland’s most famous music venues, King Tut’s Wah Wah Hut, countless clothing boutiques and is just a stone’s throw from George Square.

We’re confident that just like our other restaurants, our Glasgow diners find themselves lost in the Pesto atmosphere, thanks to our friendly and attentive staff, ambient music and above all our delicious traditional Italian food.

Experienced restauranteur and Scottish-born Canadian-raised Francis Carr is all set to head up the new site. We caught up with him to ask what the year ahead holds for Scotland’s first Pesto.

OK Francis, as you’re brand new to the Pesto team, can you give us five words that best describe you?

Passionate, Friendly,Energetic,enthusiastic and Organised (but my wife would disagree with the last).

How long have you lived in Glasgow?

I have lived most of my life around Glasgow , but did grow up in Canada.

What’s the best thing to do in Glasgow before and after good meal (at Pesto, of course)?

Visit some of the great bars, and attractions around the city and experience the great Glasgow culture.

How long have you worked in the restaurant industry?

Seventeen years.

What attracted you to the restaurant industry?

Interacting with customers , providing great service and developing fantastic teams.

Is there anyone in the industry you find to be particularly inspiring?

I would have to say Gordon Ramsey, his passion and drive for perfection is incredible.

What drew you to Pesto?

The fantastic concept that suits so many peoples individual needs and wants.

What does the year ahead hold for Pesto Glasgow?

A lot of hard work & enjoyment in ensuring that the new Pesto restaurant exceeds all expectations.

OK, now for a little more about you; what was the last movie you went to and how was it?

Toy Story Three in 3D for the Kids and it was fun for me as well.

What’s on your iPod right now?

I’ve got quite a diverse range of music from Bruce Springsteen to Usher. My first album was disco Mickey Mouse aged 7.

What will you be up to this bank holiday weekend?

Hopefully watching Man Utd win the champions league.
